This recipe serves as a nice little Mexican-style seafood cocktail appetizer!
We have a great restaurant here in town called Goode Company Seafood that has a wonderful appetizer called Campechana de Mariscos. It’s a Mexican-style seafood cocktail served in parfait glass and served with chips. They add crab meat and fire-roasted Anaheim peppers, so feel free to add those items as well, but this recipe is still pretty tasty and we use it mainly as an appetizer.
- 1/2 cup lime juice
- 1 pound Shrimp, deveined, cooked, and cut into 1/4″ pieces
- 1/2 White Onion, diced
- 1/3 cup Cilantro, chopped
- 1/2 cup Ketchup
- 1-2 tbsp Hot Sauce (Tabasco)
- 2 tbsp Olive Oil
- 1 cup Cucumber, peeled, seeded, and diced
- 1 Avocado, diced into 1/2″ cubes
- 1 tsp Kosher salt
- Tortilla Chips
This is the easy part…just combine all the ingredients and refrigerate for 20-30 minutes before serving. You can make this a day or two ahead of time and it will taste great though I would advise adding the avocado just before serving.
